Broccoli and Chickpea Salad Recipe

  • 4 cups chopped broccoli florets
  • 1 can chickpeas (drained and rinsed)
  • 1/4 cup lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 Tbsp. minced fresh garlic
  • 1 Tbsp. minced ginger
  • 1 Tbsp. fresh thyme leaves or 1 tsp. dried thyme
  • 1/2 cup sliced shallots
  • 1/4 cup shredded parmesan cheese

Steam broccoli until tender. Steam chickpeas just to heat through. Allow broccoli and chickpeas to cool slightly. Whisk together lemon juice, oil, garlic, ginger, and thyme in a large bowl. Add broccoli, chickpeas and shallots. Toss to coat and season with salt, pepper, and top with parmesan cheese.
