Broccoli Cheese Soup Recipe

  • 6 cups broccoli florets
  • 4 Tbsp. butter
  • 1 cup minced onion
  • 1/2 cup minced carrot
  • 1/2 cup minced celery
  • 2 Tbsp. all-purpose flour
  • 4 cups vegetable broth
  • 1 lb. cheddar cheese shredded (about 4 cups)

Steam broccoli. While broccoli is steaming melt butter in pot. Add onion, carrot, and celery. Cook until tender. Stir in flour to coat vegetables and cook for 1 minute. Slowly add broth while stirring. Bring soup to a boil and cook for 5 minutes. Slowly add cheese in 1 cup increments until melted. Allow soup to simmer but not boil then add broccoli. Cook for 1 minute and then serve hot.
